Rossini’s Welcomes New Italian Chef

The recent appointment of Chef Paride Noviello at the award-winning restaurant, Rossini’s, will see him continue the tradition of delighting diners with authentic Italian cuisine.

Born in the northern Italian port of Trieste, Chef Paride discovered his passion for cooking while helping out in the family restaurant from the tender age of 13.  He went on to study at the Istituto Alberghiero I.A.L., the School of Culinary Arts in Lignano Sabbiadoro, Italy, and after completing his bachelor’s degree in Culinary and Hotel Management the young chef decided to explore the world.

His culinary journey took him to Deira in Dubai where he was Junior Chef de Partie at the romantic restaurant, La Cucina.  Intrigued by Southeast Asian culture and cuisine, he moved on to Jakarta, Indonesia, working as a Sous Chef at Casa d’Oro. Prior to joining Sheraton Grande Sukhumvit he was Head Chef at La Gondola in the Kempinski Hotel Beijing, China. Highlights in Chef Paride’s career include the privilege of presenting his exquisite cuisine to members of the Thai royal family, and celebrities such as Kate Moss and Naomi Campbell.

Zenato Wine Dinner on July 12, 2013 at Rossini's


Rossini’s award-winning Italian restaurant at Sheraton Grande Sukhumvit, A Luxury Collection Hotel, Bangkok, together with G Four Fine Wines will host a memorable Zenato Wine Dinner on Friday July 12, 2013.

Founded by Sergio Zenato in 1960, the Zenato winery is renowned for crafting Italian wines of exceptional quality at its Santa Christina Estate on the southern shore of Lake Garda. The winemakers are pioneers of Lugana, an expressive white wine produced with the local grape varietal, Turbiana, and also highly regarded for the production of outstanding Amarone reds. Zenato have garnered numerous accolades including ten “Tre Bicchieri” or “Three Glasses” awards from the highly respected Italian food and wine magazine, Gambero Rosso.

Guests at the Zenato Wine Dinner will be welcomed with a glass of supple and fragrant Follador Prosecco Gold to accompany Chef Paride Noviello’s delightful aperitifs and savory bites. Seated in Rossini’s enchanting Tuscan villa setting, diners will enjoy the first of five beautifully executed dishes, slow cooked yellow tail with celeriac root, and purple carrot sour cream espuma. The refined dish will be paired with Ca Dei Frati Lugana 2011, a fresh and zesty white wine with an intense floral perfume.

The second dish of the evening will be succulent braised veal agnolotti with veal jus and beetroot foam served with the full bodied Zenato Cormi Corvina Merlot 2008. The exquisite dish will be followed by a velvety Tuscan artichoke soup with 24 months aged Parmesan paired with Zenato Ripassa Valpolicella 2009, a bold wine bursting with aromas of cherry and exotic spice. A highlight of the unforgettable wine dinner will be the seared breast of goose with white asparagus, braised Italian Borettane onion and an Amarone reduction served with Zenato Riserva Sergio Amarone 2006. The venerable vintage is only produced during years of exceptional harvests and undergoes four years of maturation in large oak barrels to produce a complex and truly impressive wine. The memorable evening will end with an irresistible dessert of hazelnut chiboust with yogurt crisp, mint jelly and dry raspberry paired with the Zenato Recioto Della Volpolicella 2007, a distinctly modern take on a traditional sweet wine, and followed by petit fours, coffee or tea.
