Born
in Trieste, Chef Paride is an exceptionally gifted chef with an extraordinary
knowledge of his native Italian cuisine. At Rossini’s, lovers of fine dining
will enjoy an unforgettable evening of his distinctive Sicilian specialties
paired with a handpicked selection of premium quality Italian wines.
Diners
will be warmly welcomed with delightful aperitifs and savory bites and Follador Prosecco Gold, a delighful well-balanced sparkling wine with hints of
pear and
star fruit.
Seated in the enchanting Tuscan villa setting of
Rossini’s, diners will be served Chef Paride’s first dish of the evening, the
delicately flavored slow cooked octopus with asparagus and summer pea foam. The light starter
will be accompanied by Rosé Nero
d’Avola Feudo Maccari 2011, a fresh flavored cherry-blushed
wine with engaging floral and fruit scents. Diners will also enjoy borlotti bean soup
with mussels and Tialla scallops served with Greco
di Tufo DOCG
2011 from Feudi di San Gregorio, one of Italy’s most
renowned wineries. Made with 100% indigenous Greco grapes, the outstanding wine
received
Gambero Rosso’s highest prize, the “Tre Bicchieri” or “Three Glasses” award.
Chef Paride’s third dish of the evening will be the
intruiging fregole pasta with scorpionfish, raisins and parsley emulsion.
The beautifully presented and delicious dish will be paired with Maharis
Feudo Maccari 2008, a robust Sicilain red wine made with Nero d'Avola, Cabernet
Sauvignon, and Syrah grapes that produce notes of balsamic, cocoa and coffee.
The highlight of the unforgettable gastronomic evening
will be wild
salmon with Guanciale ham and caponata vegetables, the
traditional Sicilian condiment of eggplant, tomato, and anchovies. The
perfectly executed fish dish will be served with Conti Zecca Nero Rosso Salento IGT 2009. Diners will enjoy a sweet finale of pistachio
soft sponge with ricotta candied fruit semifreddo and almond crocant
complemented by Carlo Hauner Malvasia delle Lipari
Passito 2010. Petit fours by Rossini’s
and coffee or tea will
